Ingredients
  

  • 2 2/3 cup flour all-purpose
  • 1 tsp baking soda
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 4 eggs
  • 1 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup vegetable oil
  • 3/4 cup buttermilk plum flavor
  • 1/2 cup walnuts chopped, not too course or too fine
  • 2 cup plum pieces fresh, skinned, stone removed
  • 1/2 cup yogurt plum flavor

Method
 

  1. Preheat oven to 350°F . Prepare cake pans with non-stick spray.
  2. In medium sized mixing bowl, sift together dry ingredients; set aside.
  3. In large mixing bowl, beat eggs. Add sugar – beat thoroughly until smooth. Add oil and vanilla – beat on high until frothy.
  4. Combine yogurt and buttermilk.
  5. Alternating…add flour mix and buttermilk-yogurt mixure; set mixer to low.
  6. Fold in plum pieces and walnuts.
  7. Divide batter among cake pans.
  8. Bake for 32-36 minutes.
  9. Cool completely before removing from pan.

Notes

Frost with luscious Vanilla or Cinnamon Buttercream. Consider adding plum jam as a filling or garnish with plum preserves.
