Blueberry Lemon Curd

A delicious compliment to all manner of baked goods.

Ingredients
  

  • 2 c blueberries, fresh frozen is okay
  • 1/4 c lemon juice, fresh
  • 2/3 c granulated sugar
  • 2 tsp lemon zest
  • 4 egg yolks
  • 4 tbsp butter

Method
 

  1. Bring blueberries and lemon juice to a light simmer - stirring almost continually.
  2. Strain blueberries. Press as much juice as possible through strainer until pulp remains.
  3. In double boiler, combine blueberry juice, sugar, lemon zest, and butter.
  4. Add beaten egg yolks.
  5. Stirring nearly continually, cook until thick enough to coat the back of a spoon.
  6. Fill small jars. Allow to cool some before adding lid.
