Blueberry Lemon Curd

Ingredients
Method
- Bring blueberries and lemon juice to a light simmer - stirring almost continually.

- Strain blueberries. Press as much juice as possible through strainer until pulp remains.

- In double boiler, combine blueberry juice, sugar, lemon zest, and butter.

- Add beaten egg yolks.
- Stirring nearly continually, cook until thick enough to coat the back of a spoon.

- Fill small jars. Allow to cool some before adding lid.
