Lime Layer Cake

Ingredients
  

  • 3 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 16 tbsp butter 2 sticks, softened
  • 2 cup sugar
  • 3 eggs
  • 1 1/2 tbsp lime zest 2-3 large limes
  • 1/3 cup lime juice juice from 2-3 large limes
  • 1 tsp lime concentrate
  • 1 1/2 tsp vanilla extract clear
  • 2 cup plain yogurt substitute: sour cream

Method
 

  1. Preheat oven to 350°F. Prepare cake rounds with non-stick cooking spray
  2. Combine dry ingredients (flour, baking soda, baking powder, salt) in medium bowl; set aside.
  3. In large mixing bowl cream butter, add sugar until smooth. Add eggs one at a time, beat thoroughly after each addition then beat until fluffy.
  4. Add lime zest and fresh lime juice; mix well. Add lime concentrate, mix. Add vanilla extract, mix.
  5. Alternately add flour and yogurt. Mix well, until just combined.
  6. Divide evenly among 8" rounds. Batter will be thick!
  7. Bake cakes approx. 32-37 minutes
  8. Cool cake rounds for 10 minutes before removing cake to cooling rack
  9. Frost when completely cool.
