Strawberry Curd

Ingredients
  

  • 1 1/4 cup fresh strawberry purée sub: 16 oz frozen strawberries, pureed
  • 2/3 cup granulated sugar
  • 1/8 tsp salt
  • 2 tbsp cornstarch
  • 4 egg yolks
  • 1 1/2 tbsp fresh lemon juice juice from 1/2 lemon
  • 5 tbsp butter cut into small chunks

Method
 

  1. In sauce pan, bring to simmer: sugar, strawberry puree, salt, egg yolks, lemon juice, and cornstarch over med heat.
  2. Whisking constantly, heat to 170°F.
  3. Remove from heat, whisk in butter one small piece at a time.
  4. Allow to cool to room temperature.
  5. Pour into jar, cover, and refrigerate.
