White Chocolate Cupcake

Ingredients
  

  • 2 3/4 cup flour
  • 1 tsp baking soda
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 3/4 cup white hot chocolate powder Caotina brand
  • 1 1/2 cup granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 1 tsp vanilla extract clear
  • 6 egg whites

Method
 

  1. Preheat oven to 350°F . Prepare cupcake pan with paper liners.
  2. In medium sized mixing bowl, sift together dry ingredients; set aside.
  3. In large mixing bowl, beat egg whites until medium stiff. Add sugar – beat thoroughly until smooth. Add oil and vanilla – beat on high until frothy.
  4. Alternating…add flour mix and buttermilk; set mixer to low. Finish mixing by hand.
  5. Fill cupcakes 3/4 full.
  6. Bake for 22 minutes.
  7. Cool completely. Frost with your favorite buttercream.

Hot Tip:  This doesn't lend itself to substituting half of the oil with applesauce - some of the sparkly vanilla flavor is lost.  The cake turns out wonderfully, but the flavor is diminished a wee bit.
