Thanksgiving Hummingbird Cake

I loved being in the kitchen today baking this Hummingbird Cake…the flavor profile of pineapple, banana, and cinnamon is so delicious.  Also, I added a few chopped pecans just for fun.

This recipe produces quite a bit of cake – there isn’t much in the way of rising since the batter doesn’t include baking powder, but there is volume. 

The vanilla buttercream is a perfect pairing with this cake. 

I tried a new technique of carving in the frosting with notched cake trimmer.  It was my first time trying to make this square-edged design work.  It turned out….ok.  I’m still learning so the results should improve with more practice. And more buttercream.

And of course…all those cupcakes.

After smoothing away the troughs in the buttercream, I tried a small banner.  I need to work on my banner-making skills.  Sigh.

 
And finally, I settled on sprinkles across the board – it’s a simple ending, but trying several different techniques was a great opportunity to learn and practice.  It’s a win/win.
 

 


This is a terrific cake to bake and share with friends.  I love that I get to do that.  I love my life partner and our life together.  Sobriety is worth it … every day.
